VLEIS sowat 1 kg varkrib of ’n braaistuk soos ’n heel varkskouer of -boud sout en vars gemaalde swartpeper sap en skil van een suurlemoen

MARINADE 1 knoffelhuisie, fyn gekap 125 ml (½ k) tamatiesous 25 ml (5 t) olyfolie 50 ml blatjang 30 ml (2 e) gemengde vars kruie soos roosmaryn, tiemie en origanum, fyn gekap 15 ml (1 e) balsemieke asyn 200 ml bier

Geur die varkstuk met sout, peper, sap en skil. Meng die bestanddele vir die marinade en giet dit oor die varkstuk. Laat marineer dit ’n uur of oornag. Voorverhit die oond tot 200 °C. Plaas die varkstuk in ’n oondbak en oondbraai 15 minute. Verlaag die hitte tot 160 °C en oondbraai nog 1½ uur of tot gaar en die vleissappe nie meer bloederig is nie. Laat rus sowat 10 minute en sny in skywe. Sit voor met gestoomde groenbone, dolmades en platbrode.
