Fruit Popsicles

Recipe 1

Banana Split Popsicles

Ingredients 3 over-ripe bananas, broken into pieces ¼ cup non-dairy milk - I used unsweetened vanilla almond milk 12 strawberries, hulled and halved ¼ cup dairy-free chocolate chips ¼ section of a fresh pineapple, diced (yield ~1/3 cup) 10 cherries, halved with pits removed Instructions If using a popsicle mold that requires wooden sticks, soak in cool water for 5 minutes before using.

Place banana pieces and milk in a blender and blend until smooth. Pour into a glass with a spout and set aside. Place strawberry halves in the blender and pulse just until broken down but not smooth. Place into a dish and set aside. Get to layering your popsicles! Begin with a tablespoon or so of banana puree, followed by 4-5 chocolate chips, divide the pulsed strawberries between molds, top with diced pineapple and press the pineapple down slightly so that it's flat in the mold. Follow this by 2 cherry halves, then top with remaining banana puree. Tap the popsicle mold on the counter a couple of times to release bubbles throughout the mold. Top with additional banana puree if needed. Slide the soaked sticks into the prepared molds and stick in the freezer for at least 12 hours or better yet, overnight. To remove popsicles, run molds under hot water for a couple of seconds and wiggle out.

Recipe 2

Strawberry Smoothie Pops (soy and gluten-free!)

Ingredients:

1/2 cup sliced pineapple or mango (or banana) (60g) 1/2 cup sliced strawberries (80g) 1/3 cup raw kale or spinach (omit if desired) (15g) 1/4 cup milk or yogurt of choice (60g) 1/4 tsp cinnamon 1/2 tsp pure vanilla extract sweetener of choice, to taste (amount will depend on your tastebuds and also on what type of milk you use. Remember that the frozen product will be much less sweet. Try 1-2 stevia packets or 1-2 tbsp of a sweetener like pure maple syrup.)

Instructions:

Combine everything in a blender, food processor, until super-smooth. Pour into popsicle molds or paper cups, and insert spoons or popsicle sticks. Enjoy!

Recipe 3

GoddessLife Fruit Popsicle

Ingredients: Fruit Juice: cherry juice, watermelon juice Fruit: sliced kiwi, purple grapes, sliced peach

You will need: Popscile mold Popscile sticks Freezer

Instructions:

1) Pour cherry juice into the Popsicle molds and fill 1/2 of the way.

2) Put slice of peach in first, then kiwi (trying to make sure it is on it's side, standing upright), then pop in a few grapes.

3) Freeze the Popsicle for 2 hours.

4) Pour in watermelon juice into Popsicle molds to the top.

5) Freeze popsicle for 1 or so hour.

6) Remove from the freezer. The Popsicles should be starting to set. Insert the Popsicle sticks.

7) Return to the freezer and freeze for 4 more hours before eating.
