Grilled Milkfish Recipe

INGREDIENTS:

1 Whole Milkfish 2 Lemon slices or Calamondin 1 1/2 Teaspoon of salt 1/8 Teaspoon of freshly ground black pepper 1/2 Cup of finely minced tomatoes 1/2 Cup of finely minced onion 2 Stalks of finely minced scallions 1 Tablespoon of lemon juice 4 Tablespoons of soy sauce

PROCEDURE:

1. Cut and remove the backbone of the milkfish by using a sharp knife. 2. Rub fish inside and out with lemon or calamondin to remove the fishy smell. Season with salt and pepper. 3. Mix the tomatoes, onions and scallions in a bowl. 4. Open the milkfish body and stuff the mixed tomatoes and onions inside. 5. Wrap it in an aluminum foil. Don't wrap it too tight. 6. Grill the milkfish for around 10-15 minutes on each side or until the fish is cooked. 7. Serve the grilled milkfish with a soy sauce mixture of calamondin or lemon.
