Cucumber and Tuna Canapés

Ingredients:
- 1 large cucumber
- 1 can of tuna with vegetables
- 1 celery stalk
- Mayonnaise
- Lemon Juice (to taste)
Procedure:
- Wash and peel your cucumber. I left a couple of stripes of the skin on so the slices wouldn't be too flimsy.
- Cut the cucumber into slices about 1/4 inch thick and place aside.
- Open your can of tuna and drain all the liquid.
- Place the tuna in a bowl and add a squirt of lemon juice, about 5-6 tablespoons of mayonnaise (you can adjust this depending on the consistency you like), and the finely minced celery stalk. Mix well until combined.
- Scoop about a teaspoon of the tuna mix onto the centers of the cucumber slices and you're done.
You can serve them right away or cool them in the fridge to make them even more refreshing.
* I didn't add any extra condiments as my tuna contained vegetables and came with a spicy oil that added a very nice kick and flavor to it; if you use regular tuna you can add salt and pepper.
