Vinegar Pickled Carrots

I made this for the first time and it turned out great The carrots were nice and crisp with a little spicy kick from the ginger. It is more economical to do this than to purchase bottled pickles. This is my very good snack. Delish!
Ingredients: 3 large carrots, julienned or thinly sliced 1/2 cup water 1/2 cup cane vinegar 2-3 tbs sugar, according to your taste 1 tsp salt 1 tbs thinly sliced ginger 3 cloves garlic, sliced 1 med onion white, sliced 1 sm red bell pepper 1/4 cup raisins, optional
Procedure: In a saucepan, mix cane vinegar, water, sugar, salt. Bring the mixture to a boil. Remove from heat and allow to cool slightly.
Place the carrots, ginger, onion, bell pepper, and garlic in sterile jar. Cover with the vinegar solution.
Seal the jar, refrigerate and marinate carrots overnight before serving. Enjoy!
