Pork Belly Lechon or Porchetta

Material needs: Broiler Aluminum foil Brush Paper Towel Injector Butcher Twine Small Pan

Ingredients:

Pork belly boneless 2.268 what i used mostly you can see this in the market pre cut already this recipe can work to 1 kilo to 1 1/2 kilo 2 Medium Red onion 2 Stalk Tanglad or lemon grass 2 stalk scallion or dahon ng sibuyas 8 pcs garlic unpeeled 1 tbs Fish Sauce or depends your taste 30 grams Salt (for braining) 30 grams Sugar (for braining) sugar 1 tbspPepper Corn (for braining) Black Ground Pepper little bit of oil 2 litters Water (2 cups use for cooking the herbs,2 cup should be ice cold water)

Braining is one of the tip for broiling so your meat will be moist

Ratio of your salt and sugar for Braining Each 1 liter of water is 30 grams of Salt and 30 grams sugar

Procedure First Step:

Braining and After

In a pan add 2 cup water Add your pepper corn 4 cloves garlic your 30 grams sugar 30 grams salt 1 onion cut it on 4 section 1 stalk lemon grass stir together for couple of minutes medium heat make sure salt and sugar are dissolve then turn off the heat pour your herbs in the ice cold water make sure your solution is the warm Use bowl that you can add your pork for soaking add the pork belly you can marinate it or 4 hours or if you wanted to use it following day its also good after braining you wash your pork in a cold water make sure u wash it well since are solution for braining are salty after you potted it dry the Pork Belly (Make Sure its dry to have a good result for crispy skin)

Procedure:

By this time you can set your over to 375 degrees

1 lay your Pork Belly

2 run your ground pepper in your Pork Slab

3 add your fish sauce to your injector and inject your pork for more flavoring taste

4 in the middle of your Pork Slab add your lemon grass fold it into 3 to 4 section combine your scallion and tie them together u can use for Butcher twine your onion( cut it 4 section ) garlic,pepper

5 Roll your Pork Slab dont worry about the herbs been out you can bring it back after you tie (using butcher twine) the Pork Slab make sure u don't overlap your pork slab secure by tying using Butcher Twine

6 In your Broiler add water put it your Pork Slab and cover with aluminum foil for 2 hrs

7 After 2 hours took out the cover ( aluminum foil) and continue to broil in 400 degrees for 1 1/2 hours to 2 hrs

8 Let you Lechon or Porchetta rest for awhile before slicing it
