Garlic Basil Lemon Stuffed Pork Loin

Marinade: 1 cup Grape Seed Oil or EVVO 2-3 crushed garlic cloves 1/2 squeezed lemon zest of lemon 3 tbsp horseradish mustard (or Dijon) 1/4 cup Honey sea salt and cracked pepper 1/4 cup Light Balsamic Vinegar Chopped fresh Basil

Stuffing: Spinach largely chopped 2-4 chopped garlic cloves Provolone and Mozzarella cheese

Marinate: whisk all ingredients together cover for 2 hrs or over night (pork or boneless chicken breast) Cut a deep pocket without piercing all the way through stuff with Spinach mixture Use toothpicks to close opening Brown on both sides in a pan on top of stove and place in a preheated 350 oven cook for 25 minutes
