BOEREWORS NACHOS AND TOMATO SALSA

INGREDIENTS: Nachos
500 g thin Championship Boerewors 500 g Doritos crisps (sweet chilli flavour) 375 ml (1 ½ cups) grated Cheddar cheese
Salsa
15 ml (1 tbsp.) sunflower oil 2 medium onions, coarsely chopped About 3 medium tomatoes, chopped
1 medium green pepper, coarsely chopped 15 ml (1 tbsp.) tomato paste Salt and freshly ground black pepper to taste
METHOD: Preheat oven to 180°C. Cut the boerewors into about 1 cm pieces. Fry in a heavy-based saucepan, with a little water until cooked. Remove the boerewors from the pan and set aside. Salsa: Heat the oil in a heavy-based saucepan and sauté the onions, tomatoes, green pepper and tomato paste until soft. Add seasoning and remove from heat. Place crisps in an ovenproof dish or plate. Spoon the salsa and boerewors pieces over the crisps and top with grated cheese. Place under oven until the cheese has melted. Serve warm.
