SPICY CHAKALAKA

Ingredients

1/2 onion, finely chopped 2 cloves garlic, peeled and crushed 1 of each red, yellow and green peppers, diced 2 x 400g tins chopped tomatoes 2 tsp smoked paprika 1 tsp smoked chilli flakes 2 tsp sugar for the egg whites sea salt and freshly ground pepper, to taste

Cooking Instructions

In a large saucepan, saute the onion in olive oil until soft and translucent. Add the garlic and peppers and saute for a further 5 minutes. Add the tomatoes, paprika, chilli flakes and sugar then turn down the heat and allow to simmer gently for 15-20 minutes until the vegetables are soft but still holding their shape. Season to taste then serve.
