STEAMED MUSSELS WITH WHITE WINE, GARLIC AND THYME

Ingredients

500 ml dry white wine 450 to 500g mussels in their shell or half shell 5 garlic cloves, finely chopped 4 Tbsp butter, melted 4 tbsp fresh parsley,finely chopped

Cooking Instructions

Pour the wine into a large pot and bring it to the boil. Add the mussels and garlic and cover the pot, allowing them to steam for a few minutes until the shells open. Discard any mussels that do not open. Remove the lid and add the butter and herbs, and let the sauce reduce and thicken a little. Tip into a large bowl and pour over the sauce.

4 sprigs fresh thyme
