Carrot Pudding

This recipe is about 80 years old. My mum's late mum (whom I did not get the opportunity to meet) used to make this carrot pudding every Christmas eve. She used to put a tikkies (English 1 quarter pence) in it as fun for her kids to see who would get the piece of pudding with the tikkie in it. Recipes such as these are very special and should be carried through the generations.
Ingredients: 1 and a half cups flour 1 and a half cups grated carrot One and a half cups desicated coconut 1 cup sugar 1 and a half tsp baking powder Pinch of salt 250g margarine 4 eggs One and a half tsp vanilla essence
Method: Cream butter and sugar Add eggs one at a time Add the vanilla essence, cake flour, baking powder and salt Add the desicated coconut and carrot Pour mixture into a greased aluminum pot. Use some water to Pat down. Cover tightly with foil and place lid over. Place the aluminum pot into a bigger aluminum pot. Put a pot stand into the pot so that the pot with the mixture in is slightly elevated. Pour enough water to steam Steam for approx 2 hours Serve with custard
