ORIENTAL SPICY FRIED PORK

Ingredients:
1 kilo pork liempo 1 small onion chopped 2 spicy fingers 4 cloves garlic crushed 2 laurel bay leaves 1 tbsp dried chili 1 tsp peppercorn Salt Water for boiling Oil for frying Lemon grass Spring onion
SAUCE
1/2 cup cane vinegar 2 tbsp apple cider vinegar 1/2 tsp sugar 1/2 tsp fish sauce 1 cloves garlic, chopped
PROCEDURE
DIRECTIONS Cut the pork belly into serving pieces then combine with the garlic, peppercorn,laurel leaves, salt and water in a pan.
Bring to a boil and simmer for 35 -45 minutes or until skin is tender with lemon grass.
Drain, cool and air dry.
Deep-fry liempo pieces in batches until golden brown and blisters appear on skin. Mix all the sauce ingredients. Top with spring onion leaves.
