PORK BINAGOONGAN

Ingredients:
1 kilo pork liempo (cut into cubes) 1/2 cup onion (chopped) 2 tablespoons garlic (chopped) 1 cup fresh tomatoes (chopped) 3-4 pieces green chili (chopped) 1/2 cup shrimp paste (bagoong) 3 tablespoons white vinegar 1 teaspoon white sugar 4 pieces bay leaf 1/2 teaspoon ground black pepper 3 cups water 3 tablespoons achuete oil 1/4 cup spring onion for garnish Salt or fish sauce if necessary.
Mama's Guide Instructions:
1. Saute onion, garlic,green chili and tomatoes on achuete oil until caramelize.
2. Add pork cubes and sauté for about 10 minutes then add the shrimp paste and simmer for 5 minutes.
3. Add the bay leaf,black pepper,white vinegar and sugar then bring to a boil before mixing other wise the vinegar will taste uncooked.
4. Pour-in the water and simmer about 20 minutes or until meat is ready.Add salt or fish sauce if necessary.
5.Sprinkle the green onion or chili on top and you can add also some fried eggplant if available.
