Apple pie bars

Apple pie bars... These little apple pie bars are super easy to make and the overall flavor and texture is fantastic, they can be quite addictive so make sure you're not alone when making them! You could also drizzle over a caramel or butterscotch sauce. Yum
Ingredients for Shortbread Crust:
115g unsalted butter, melted 50g sugar 1 teaspoon vanilla extract 1/4 teaspoon salt 125g all-purpose flour
Ingredients for Apple Filling:
2 large apples, peeled and thinly sliced 2 Tablespoons all-purpose flour 2 Tablespoons sugar 1 teaspoon ground cinnamon 1/6 teaspoon ground nutmeg
Ingredients for Streusel (the crumble that comes on top):
40g oats 70g light or dark brown sugar 1/4 teaspoon ground cinnamon 30g all-purpose flour 60g unsalted butter, cold and cubed
Method:
1. Preheat oven to 150°C. Use B-well baking spray and give the bottom and sides of an 8-inch square baking tray a good spray.
2. For the crust, stir the melted butter, sugar, vanilla extrac, and salt together in a medium sized mixing bowl. Add the flour and stir everything together until it's well combined. Press the mixture evenly into the prepared baking pan and bake for about 15 minutes while you prepare the filling and streusel.
3. For the apple filling, combine the sliced apples, flour, sugar, cinnamon and nutmeg together in a medium sized mixing bowl until all the apples are evenly coated. Set aside.
4. Make the streusel by whisking the oats, brown sugar, cinnamon, and flour together in a medium bowl. Cut in the chilled butter using a fork until the mixture resembles coarse crumbs. Set aside.
5. Remove the crust from the oven, and turn the oven up to 170°C. Evenly layer the apples on top of the warm crust. It will look like there are too many apple slices, so layer them tightly and press them down to fit. Sprinkle the apple layer with streusel and bake for 30–35 minutes or until the streusel is golden brown.
6. Remove from the oven and allow to cool for at least 20 minutes at room temperature, then chill in the refrigerator for at least 2 hours (or overnight). Cut into bars and dig in. You could even make a caramel or butterscotch sauce to drizzle over each bar!
