MILK TART

Pastry:
125gr butter 250ml castor sugar 5ml vanilla essence 1 egg beaten 250ml cake flour 250ml self-raising flour 10ml oil Pinch salt
Filling: 1 liter milk 10 large eggs 310ml sugar 15ml cake flour, made into a paste with 30ml water 2.5ml ground cardamom
To make the pastry
Cream butter and sugar together then add vanilla essence. Add egg, then gradually add the flours, oil and salt and work lightly to form a soft and pliable dough. Set aside.
To make the filling – slowly bring milk to the boil. Meanwhile beat eggs and sugar together. Remove milk from heat and pour slowly into egg and sugar mixture. Continue stirring then add flour paste and set aside.
Grease a heavy-based ovenproof dish lightly with butter. Roll out pastry on a floured surface and line dish with it. Pour filling in and place small nuts of butter on top. Sprinkle with ground cardamom and bake on bottom shelf of oven at 200°C for 40 minutes. Serves 10 persons
