BUTTER BISCUITS

250gr soft butter (1 cup) 7.5ml oil (1tspn) 500ml yellow sugar 2.5ml (.50tspn) vanilla essence 1large beaten egg 1kg cake flour 2.5ml (half tspn) bicarbonate of soda
Cream butter oil and sugar together until light then add essence and egg. Add flour and bicarb and mix together to form a fairly stiff dough. Roll out on floured surface and cut into diamond shapes with cookie cutter. Decorate with sugared fruit and place on a greased baking tray and bake at 200°C for 10 minutes. Cool on a wired rack
