250ml castor sugar (1 cup) 250g butter (1 cup) 2 large or 3 medium eggs 15ml oil (1tbsp) 500ml cake flour (2 cups) 500ml self-raising flour (2 cups)

Cream sugar and butter together then add eggs, oil and flours to form a soft dough. Roll out and press into a greased baking sheet, leaving a little aside for grating over the top.
