Beautiful whole baked fish with a lemon and garlic butter sauce served with crispy golden roasted potatoes. Consisting of only a few ingredients this dish is quick, easy and delicious.
Ingredients:
B-well canola baking spray B-well lemon infused canola oil 1 2-to 2 1/4-pound fish (mackerel, sardines) cleaned 1 tablespoon minced garlic 2 tablespoons fresh lemon juice 3/4 teaspoon seafood seasoning 2 tablespoons (1/4 stick) butter, cut into pieces 6 fresh thyme sprigs or Rosemary 6 thin lemon slices Pancetta or Bacon (optional)
Method:
1. Mix the butter, minced garlic and lemon juice together.
2. Place on a large piece of foil on large baking tray.
3. Use some B-well baking spray and spray the foil where the fish will be laying.
4. Cut slits into the fish and season each cavity with the garlic, lemon butter mix.
5. Place thyme/rosemary sprigs inside each cavity and sprinkle the outside of the fish with salt and pepper.
6. Top with lemon slices. Drizzle over some B-well lemon infused canola oil. Fold edges of foil over fish; seal.
7. Preheat oven to 170°C. Bake fish until cooked through, about 45 minutes. Transfer fish to platter and serve! Do not overcook the fish, it's very important. If you use several smaller fishes then you can look at baking it for about 25 to 30 minutes.
Optional:
If you can afford some Pancetta then you could make a little thinly sliced Pancetta blanket over the fish, only using a slice here and there. The combination might sound strange but it will help keep the fish moist and the taste works together perfectly. You could also use bacon.
Baked Potato Side Dish:
1. Simply cut a few potatoes into large chunks removing or leaving the skin on them, cook in a pot of boiling water for about 20 minuets or until soft.
2. Add the boiled potato chunks to a pot of B-well canola oil and fry and golden crispy. Feel free to sprinkle some thyme or rosemary over the crispy chips, it works together so well!
Serve this dish along with a glass of your favorite white wine.
