Jalapeno Poppers

These delicious Jalapeno Poppers are incredibly easy to make and can be served as appetizers or as a main meal, just make sure you make enough of them - they are addictive.
Ingredients:
12 fresh jalapeno peppers, seeded 1 1/4 cup cream cheese, softened 1 cup Monterey Jack cheese, shredded 3 tablespoons bacon bits 2 teaspoons smoked paprika or normal paprika 1 teaspoon, ground black pepper 1 cup milk 1 cup all-purpose flour 1 cup dry bread crumbs, store bought 1.5l B-well canola oil for frying
Method:
1. Cut a lengthwise incision from the stem to the bottom of each pepper, make a crosswise incision at stem end, forming a T. Open up the jalapenos and de-seed & devein it using your kitchen knife.
2. In a medium bowl, mix the cream cheese, Monterey Jack cheese and bacon bits. Spoon this mixture into the jalapeno peppers so that the filling is equally divided.
3. Put the milk and flour into two separate small bowls and add the paprika and ground black pepper to the flour. Dip the stuffed jalapenos first into the milk then into the flour, making sure they are well coated.
4. Dip the jalapenos in milk again and roll them through the breadcrumbs.
5. In a medium skillet, heat the B-well canola oil to 180°C. Deep fry the coated jalapenos 3 to 4 minutes each or until golden brown. Remove and let drain on a paper towel. (be careful not to fry to many jalapenos at the same time as this will make the batter come out soggy)
TIPS: If the poppers are not spicy enough, you can add back some of the seeds into the cheese mixture.
