Today we're showing you how to make an insanely delicious Mexican chicken filling for that perfect burrito.
Ingredients:
900 grams deboned chicken breasts 1 Tbsp B-well canola oil 1/2 cup mild tomato salsa, store bought 3 Tbsp brown sugar 3 fresh green chilies, finely chopped 400 grams diced tomatoes 1 Tbsp chili powder 1 ½ tsp salt 1 tsp ground cumin 1 tsp garlic powder ½ tsp onion powder (optional) ½ tsp smoked paprika 1 tsp dry oregano Salt and ground black pepper to taste Hot sauce to taste
Method:
1. Rub chicken breasts with B-well canola oil and place in the bottom of your slow cooker. Add all of the remaining ingredients except for the hot sauce. Cook on high heat for 2-4 hours or on low for 6-7 hours or until chicken is tender enough to shred.
2. Remove chicken to a cutting board, and let rest 5 minutes before shredding (there will be liquid remaining). Return shredded chicken and let cook on low for an additional 20 minutes to absorb some of the liquid/juices. Drain all excess liquid and add hot sauce to taste. Add salt & pepper to taste.
3. Add the burrito chicken mixture to some fresh tacos or tortillas and add tomatoes, avocados/guacamole, cilantro and a big dollop of B-well creamy gourmet mayonnaise.
