Today we have a deliciously decadent old-fashioned pecan nut pie recipe, best served with a heavy dollop of cream or vanilla ice cream to cut through the sweetness. If you're on any sort of diet, look away now.
Ingredients:
1 store bought short crust pastry shell 1 cup brown sugar 3/4 cup golden syrup 1/2 teaspoon Salt 2 teaspoon vanilla extract 1/3 cup melted butter (salted) 3 whole eggs, beaten 2 cups pecan nut halves 1/2 teaspoon grated orange zest (optional)
Method:
1. Get out your store bought short crust pastry shell.
2. In a bowl mix together the brown sugar, salt, golden syrup, butter, eggs, grated orange zest and vanilla essence.
3. Pour your mixture into the unbaked short crust pastry shell. Then evenly spread the halved pecan nuts over the top of the mixture.
4. Cover the top and crust lightly/gently with foil. Bake pie at 180ºC for 30 minutes. Remove foil, then continue baking for another 20 minutes, being careful not to burn the crust or pecans.
5. The pie should not be overly runny or jiggly when you remove it from the oven. If it shakes a lot, cover with foil and bake for an additional 20 minutes or until set.
Allow to cool for several hours or overnight.
