Pork tacos

Today we have deliciously messy pork tacos with a homemade B-well creamy mayo dressing for all you Mexican food lovers out there. It takes about 15 minuets to make from start to finish, prepare yourself for a Mexican standoff with these delicious tacos.
Ingredients:
20ml B-well canola and olive oil blend 20ml B-well lemon infused oil (optional) 200 g Streaky bacon, chopped 200 g Pork fillet, chopped into small chunks or Beef mince 1 Red onion, chopped 1 Small piece of ginger, chopped 1 Garlic cloves, chopped 20 g Parsley, chopped 6 Taco shells 100 g Cherry tomatoes 1 tsp Chilli flakes 100 g Black beans 100 g Corn Salt and pepper to taste
Ingredients for Creamy Mayo Dressing:
100ml B-well creamy gourmet Mayo 50ml Fresh cream Coriander, chopped 20 g 20ml B-well canola lemon
Method:
1. Fry the bacon in the B-well canola olive oil blend in big pot until crispy, add the onion and the pork and some salt and pepper.
2. Add the ginger and the garlic and some of the parsley
3. Pre heat an oven to 200 degrees and bake the shells until crispy and warm.
4. Add the cherry tomatoes, Chilli flakes, beans and corn to the pot and simmer for about 3 minuets.
5. Make the dressing by combining the B-well creamy gourmet mayo, cream, coriander and B-well lemon infused canola oil.
6. When your tacos are nice and golden brown, take a few spoonfulls of the filling mixture and stuff it into the taco shells then finally cover the fillings with a few dollops of the cream dressing and serve.
