Potato pockets are fun finger foods everyone will love! Simply boil your potatoes until they’re soft. Once they’re cooked, remove them from the pot, wait for them to cool, cut them in half and scoop out the insides. Drizzle olive oil, salt and pepper over the skins and pop them in the oven to get crispy. While they’re cooking, take your mash and mix in chives, cooked mushrooms, salt, pepper and cream. Remove your skins from the oven and spoon your mash into the cups. Yum!
