Rice pudding

Rice pudding topped with chopped almonds, shredded coconut and dark chocolate shavings... Yum
Ingredients:
2 1/4 cups whole milk 1 cup short-grain or long-grain white rice 1/2 teaspoon salt 6 tablespoons caster sugar, plus more as needed 1 teaspoon vanilla or almond extract Sprinkle over chopped almonds, shredded coconut and dark chocolate shavings to decorate
Method:
1. Place the milk, rice, sugar, and salt in a medium saucepan and bring to a boil over medium-high heat, stirring occasionally until the sugar has dissolved.
2. Lower the heat to a simmer and cook uncovered, stirring occasionally, until the rice is tender and the mixture thickens, about 20 minutes.
3. Remove from the heat and stir in the vanilla or almond extract. Add additional sugar if needed, transfer to serving bowls and sprinkle over some chopped almonds, shredded coconut and dark chocolate shavings!
