EGG DROP SOUP - 1979

You’ll need:

4 cups organic chicken stock or homemade chicken stock 1/2 teaspoon sesame oil 1/2 teaspoon salt Pinch of sugar Pinch white pepper 5 drops yellow food coloring or large pinch of turmeric powder (optional, but if you want “the look…”) ¼ cup cornstarch mixed with ½ cup water 3 eggs, slightly beaten 1 scallion chopped 1 tablespoon cilantro, chopped (optional)

Bring the chicken stock to a simmer in a medium-sized soup pot. Stir in the sesame oil, salt, sugar, and white pepper. Add in 5 drops of yellow food coloring, if using. The yellow food coloring gives the soup that rich restaurant-style yellow color but it is, of course, optional. Taste the soup, and adjust the seasoning if needed. Source and photo: The Woks of Life
