Cajun chicken

Ingredients: 1/2 kg chicken breast, no skin and no bone 200 gr mozzarella cheese 1 cup spinach previously bleached 2 Tbsp vegetable oil 2 Tbsp Cajun Seasoning (sell it already prepared but below is the recipe) 1 Tbsp bread crumbs Salt and pepper to taste
Preparation: Preheat the oven to 180°C. Do cuts on the chicken as shown in the picture. In A Medium Bowl, combine the cheese, spinach, salt and pepper. Combine the Cajun Seasoning and bread crumbs in a small bowl. Pour a little mixture of spinach on every cut of the chicken breast Varnish each breast with the vegetable oil. Sprinkle the Cajun seasoning mixture evenly over everything. Bake for 35 to 40 minutes, or until the chicken is cooked through.
Cajun Seasoning (200 GR) 1 Tbsp cayenne pepper 1 Tbsp paprika 1 tbsp black pepper 1 Tbsp cumin 1 teaspoon dried onion 1 teaspoon dried thyme 1 Tbsp garlic powder 1 Tbsp. Dried Oregano 1 teaspoon dry mustard
Preparation: Put all the ingredients in a coffee grinder, or in a blender and grind pretty well until you have left a fine powder. Keep in an airtight glass jar.
