Caramelized chicken

Ingredients: 1/2 kg chicken thighs with the skin, boned 2 tablespoons of oil 3 cloves garlic, minced 1/2 jalapeño, sliced Marinated 1 Spoonful of sugar 1 tablespoon fish sauce Pepper Sauce 1 tablespoon fish sauce 3 tablespoons of water 1/2 spoonful of sugar 3 teaspoons of rice vinegar or apple cider vinegar

Preparation: Marinate the chicken with the ingredients of the marinade for 10 minutes. Mix all the ingredients of the caramel sauce in a bowl, set aside. Heat a skillet over high heat. Add 1 tablespoon of oil. Fry the chicken (Skin-side up) and sear completely.. Add the rest of the oil in the pan and add the garlic. Add the chicken in the frying pan and sauce. Reduce Heat to simmer and continue cooking until the sauce reduces. Add jalapeño and continue cooking for about 1 MINUTE.
