Chicken a la champagne

Ingredients: Olive Oil 2 Tbsp butter 4 chicken breasts 1/3 cup flour 2 tbsp Parmesan cheese Salt Pepper 1/2 cup sliced mushrooms 1/4 cup champagne 2/3 cup heavy cream 1/8 tspn red chili flakes 1/4 teaspoon tarragon
Preparation: Mix the flour, salt, pepper and grated parmesan cheese. Rinsing the pieces of chicken in water. Coating in the mixture of flour, until it's well covered. Heat the olive oil and 2 tablespoons of the butter in a large pan on medium-high. Add half of the chicken pieces, sauté about 3 minutes on each side. Remove the chicken from the pan and reserve on a plate. Cook the other breasts in the same way, to remove from the pan. Cover with aluminum foil and keep the heat in the oven while preparing the sauce. Add Champagne and mushrooms to the pan. Use a spatula to scrape the remains of the golden pieces. Reduce the sauce in half. Add Cream, salt, pepper, chili flakes and tarragon. Heat until the sauce thickens up to get a creamy consistency. Serve the chicken with the sauce.
